HOMEMADE vs. MANUFACTURED: Seen below, homemade Coffee Ice Cream is just a few ingredients >> these are all the items we would need to make Coffee Ice Cream so we’ll use this as a filter as we look at several manufactured Coffee Ice Creams. Any ingredients which do not need to be there we are paying for and they are designated as Not In Kitchen™ when making homemade Ice Cream.
Shown below, BREYERS FROZEN DAIRY DESSERT COFFEE IS NOT REAL ICE CREAM: This Unilever product with 14 ingredients does not meet the Standard of Identity for real Ice Cream so it legally must be called “Frozen Dairy Dessert”. ADDED COLOR: Shown below, some Coffee Ice Creams contain added Caramel Color which is Not In Kitchen when making homemade ice cream >> why would we add color to homemade Coffee Ice Cream especially when we are paying for that added color? THICKENING AGENTS and GUMS: Many Frozen Coffee Treats contain added Thickening Agents such as Carrageenan (derived from seaweed) and Cellulose Gel plus Gums including Guar Gum, Locust Bean Gum, Carob Bean Gum and Cellulose Gum.
GUMS: Shown below, many Coffee Ice Creams contain added Gums including Guar Gum, Xanthan Gum and Locust Bean Gum a.k.a. Carob Bean Gum. Locust Bean Gum and Carob Bean Gum are the same ingredient >> Locust Bean Gum is from the Carob tree.
Concerns have emerged in recent years over the possible presence of harmful ethylene oxide in Locust Bean/Carob Bean Gum. From the European Union: Residues of ethylene oxide (EO), a banned fumigant in the EU, were found at amounts above the maximum residue limit (MRL) in carob (locust) bean gum (additive E410). The pesticide entered the food chain via stabiliser blends that are used as minor ingredients in the manufacture of ice cream. Here’s a link to the source for this information:
EMULSIFYING AGENTS: Some Coffee Ice Creams and Breyers Frozen Dairy Dessert Coffee contain added Monoglycerides and Diglycerides which are Emulsifying agents keeping all of the ingredients mixed smoothly together, thereby also effecting the texture of the ice cream.
FRUCTOSE: Some Coffee Ice Creams contain commercial Fructose sweeteners which are Not In Kitchen.
