GLUTEN-FREE FLOURS — CLOSEST TO HOMEMADE®
Information updated March 2024
Even if you’re not following a Gluten-Free diet, these delicious options to the traditional Wheat Flour can add a fantastic taste and texture dimension to all of your food!
There are numerous options when it comes to Gluten-Free Flours including everything from Nuts to Roots to Grains and Legumes. Here is a sampling . . .
COCONUT FLOUR: Coconut Flour is a delicious Gluten-Free Flour made from ground dried Coconut Flesh. Coconut Flour is naturally sweet and has a lovely rich texture which is excellent in baked goods and savory applications, too.
ALMOND FLOUR: Made from ground Almonds, Almond Flour is naturally Gluten-Free and Grain-Free with a subtle nutty taste. The natural oils found in Almonds add a nice moisture to items such as baked goods, stuffings and other recipes which call for Flour. Almond Flour is also known as Almond Meal.
Please allow baked goods made with Almond Flour to sit longer-than-usual once removed from the oven due to the delicate structure.
CASSAVA FLOUR: Cassava Flour is a Gluten-Free option derived from roots of the Cassava plant. It has a neutral flavor and very fine texture which is similar to Wheat Flour so it is ideal for similar usage occasions.
TAPIOCA FLOUR: Tapioca Flour is a Gluten-Free and Grain-Free Flour derived from the starchy pulp of the Cassava plant. Sometimes referred to as ‘Tapioca Starch’, Tapioca Flour absorbs moisture and so has excellent thickening properties >> it’s great for foods such as Sauces, Soups and Fillings. When combined with other GF Flours, Tapioca Flour helps contribute to a lovely soft texture in baked items such as Cookies, Breads and Pie Crusts.
Since it is naturally high in starch, it is ideal to combine Tapioca Flour with other GF Flours for foods such as baked items >> think of Tapioca Flour as a Gluten-Free binding agent which provides some of the attributes of gluten.
HAZELNUT FLOUR: Also known as Hazelnut Meal, Hazelnut Flour is made from finely ground Hazelnuts (a.k.a. Filberts). Since nuts are Gluten-Free and Grain-Free, so is Hazelnut Flour. The inclusion of Hazelnut Flour adds a sweet, nutty profile to items such as baked goods, breading for meats + vegetables and breakfast items such as Pancakes + Waffles. The wonderful buttery flavor lends itself well to being a replacement for a portion of Wheat Flour in multiple baking recipes plus meals such as meatballs and stews.
Since nuts are high in oils, please store Hazelnut Flour (and other Nut Flours and all Nuts) in the fridge or freezer to slow oxidation and keep the Flour fresh longer.
BUCKWHEAT FLOUR: Pure Buckwheat Flour — made from Buckwheat Berries — is Grain-Free and Gluten-Free. It has a slightly earthy and assertive taste which lends itself nicely to certain items such as Breads, Crepes, Blinis, Soba Noodles and Pancakes.
Although Gluten-Free, Buckwheat can be problematic for those embarking on a gluten free diet for health-related issues >> please check with your health care provider.
Legumes — such as Chickpeas/Garbanzo Beans, Fava Beans and Lentils — also make excellent Gluten-Free Flours
